Canning, part II19 Sep 2007 12:06 pm
By Heather O.
On Monday, I made spaghetti sauce from the tomatoes I canned, added ground beef, and served it with pasta to my family for dinner.
Nobody died.
Yesterday, I put that same sauce in a bun, called it Sloppy Joes, and served another homemade (sorta) meal to my family.
Again, we are all still alive.
I am pleased. Hooray for not dying from botulism.

Hurrah!! I’m looking for a good banana pepper pickling recipe. Got one?! I probably should can the tomatoes that are in the fridge as well, but that seems like too much work:)
Comment #1 by TrixieSeptember 19th, 2007 at 12:44 pmI canned tomatoes about four years ago, and I never ate any of them because I was afraid I did something wrong and my whole family would die. Glad I’m not the only one who worries about stupid stuff…
They’re still in my food storage, and they look perfectly fine, but now I can worry that they are too old to eat. So they’ll sit there for maybe ten years, then I’ll be sure, and I’ll lament them, and eventually suffer emense guilt and then toss them out.

How DARE you suggest that I worry about stupid stuff! I am known for my calm, cool, unworried and laidback personality…..;)
Comment #5 by Heather O.September 20th, 2007 at 3:01 amI worry about that too. I did tomatoes this summer and I haven’t killed anyone, yet. I guess they jury’s still out on that one since there’s still tomatoes on the shelf. ;D
Comment #6 by All8September 20th, 2007 at 4:41 amI canned tomatoes once and I was so convinced that they had botulism, I dumped them all out about 3 months later. I just couldn’t take the worry!
